If I purchase or get a new vb skin/template and install it does all the stuff I've done on the site remain? As an example, kinda like when you update a WP theme you don't lose anything.

You may lose stuff. If the mod asked you to do any template edits, you may have to add them again to your new style. If the mod does some automatic template edits via plugins, then if the code in the search/replace is not there as expected, then those won't work either (which is part of the reason I hate automatic template edits) and you may have to manually add them to your new style.
